JP3 – Individual Pasta

Tradition, Technique and Creativity on One Plate

The JP3 – Individual Pasta category is one of the individual competition categories of GastroErasmus 2027 – 4th International Culinary Competition. It is designed for young culinary students who want to demonstrate their technical skills, creativity and understanding of one of the world’s most recognised culinary traditions.

Pasta may appear simple, but producing an outstanding pasta dish requires precision, knowledge and balance. From dough preparation and shaping to cooking, sauce consistency and final presentation, every stage requires careful technique and attention to detail.

JP3 challenges competitors to transform basic ingredients into a professional restaurant-quality pasta dish that reflects both technical competence and individual culinary identity.

The Challenge

Each competitor will have 45 minutes to prepare and present two identical pasta plates. One plate will be presented to the international jury for evaluation, while the second will be used for official presentation and display.

The pasta must be fresh and handmade by the competitor during the competition. Ready-made or commercially prepared pasta is not permitted.

Competitors may choose their own style, shape, filling, sauce and culinary concept. The dish may reflect traditional techniques, regional influences or a contemporary interpretation, but the pasta must remain the central element of the plate.

The final dish should demonstrate correct pasta preparation, appropriate texture, balanced flavours, suitable sauce consistency and professional presentation.

Participation is intended for students currently enrolled in vocational high schools or culinary institutions. 

What Will the Jury Be Looking For?

JP3 is designed to recognise young chefs who can combine traditional pasta-making skills with creativity and professional execution.

The international jury will observe the entire preparation process. Competitors will therefore be evaluated not only on the final plate but also on their organisation, dough handling, shaping techniques, use of equipment, cooking methods, time management, hygiene and professional workflow.

Particular attention will be given to the quality and texture of the pasta. It should be prepared and cooked correctly, while the selected sauce, filling or accompanying components should complement rather than overpower it.

The relationship between the pasta and its sauce is particularly important. The sauce should have an appropriate consistency and should integrate naturally with the pasta to create a balanced and coherent dish.

The official JP3 rules require the pasta to be freshly prepared during the competition and prohibit ready-made pasta. 

Creativity & Culinary Identity

Pasta offers competitors significant freedom to express their culinary identity.

Students may draw inspiration from traditional European and Mediterranean cuisine, their own national or regional food culture, or contemporary gastronomy. Different shapes, fillings, sauces and presentation techniques may be used to develop an original concept.

Creativity, however, should always serve the dish.

An innovative presentation cannot compensate for poorly prepared pasta, an unbalanced sauce or inappropriate texture. The strongest JP3 entries will combine technical accuracy, flavour, originality and professional presentation into one complete dish.

Ingredients & Mise-en-Place

GastroErasmus is a live culinary competition, and the jury must be able to observe the skills of each competitor during the competition.

For JP3, raw rested pasta dough may be prepared in advance, in accordance with the general competition rules. However, the pasta itself must be freshly prepared and handmade during the competition. 

Vegetables and fruits may arrive washed and peeled but must not be pre-cut or shaped. Basic untreated chicken, beef, fish or vegetable stocks may also be prepared beforehand, provided they have not been transformed into finished sauces.

Ready-made sauces and finished glazes are prohibited. Pre-cooked proteins and finished edible garnishes brought into the competition area contrary to the regulations are also not permitted. 

These rules ensure that the most important technical elements of the dish are created by the student during the live competition.

The jury should see your technique, not just your finished plate.

Recipe Presentation

Every JP3 competitor must prepare two copies of their recipe in English.

The recipe should clearly include the name of the dish, complete ingredient list and a brief description of the preparation method.

One copy will be provided for technical jury evaluation, while the second will accompany the presentation plate. 

Competitors are encouraged to choose a clear and professional name for their dish that reflects its principal ingredients or culinary concept.

Professional Standards

All JP3 competitors must enter the competition kitchen wearing a clean and complete professional chef uniform consisting of a chef jacket, professional chef trousers, chef hat or toque, apron and non-slip closed-toe professional safety shoes.

Professional hygiene standards apply throughout the competition. Hair must be fully covered, nails must be short and clean, and jewellery such as rings, watches, bracelets and long earrings is not permitted. 

Competitors must also follow the professional “Clean as you go” principle. Flour, dough, equipment, ingredients and waste should be managed carefully throughout the preparation process. Workstations must remain organised and must be left completely clean at the end of the competition. 

Judging & Scoring

Every JP3 competitor will be evaluated on a maximum score of 100 points across four main areas.

Mise-en-Place & Hygiene | 10 Points

The jury evaluates personal hygiene, cleanliness and organisation of the workstation, safe food handling, prevention of cross-contamination and correct waste management.

Preparation & Workflow | 20 Points

Competitors are assessed on their professional organisation, equipment skills, pasta-making technique, preparation methods, cooking techniques, time management and responsible use of ingredients.

For JP3, the jury will also be able to observe how confidently and efficiently the competitor handles, shapes and prepares the fresh pasta during the competition.

Presentation | 30 Points

The finished plate is evaluated for visual appeal, colour harmony, cleanliness, appropriate portion size, creativity and modern presentation.

Taste & Texture | 40 Points

Taste & Texture is the most heavily weighted part of the evaluation.

The jury evaluates flavour balance, seasoning, serving temperature and texture. In JP3, particular attention will naturally be given to the texture and cooking quality of the pasta, together with the balance between the pasta, sauce, filling and other components. 

Awards & Recognition

GastroErasmus recognises professional achievement through its official medal system. Competitors achieving 90–100 points receive a Gold Medal, those achieving 75–89 points receive a Silver Medal, and competitors scoring 65–74 points receive a Bronze Medal.

In addition to the medal system, the three competitors achieving the highest overall scores in JP3 will receive the official 1st Place, 2nd Place and 3rd Place trophies for the category. 

This system allows every competitor who reaches the required professional standard to receive recognition for their individual performance, regardless of their final ranking.

More Than a Pasta Competition

Pasta is one of the clearest examples of how a small number of ingredients can be transformed through knowledge, technique and creativity.

JP3 gives young chefs the opportunity to demonstrate that transformation on an international stage.

Within just sixty minutes, competitors must turn their culinary idea into reality. They must prepare their pasta, manage their workstation, execute their chosen techniques, balance their flavours and create two identical professional plates while working under competition pressure.

At the same time, they have the opportunity to bring something personal to the plate: their own culture, inspiration, creativity and interpretation of pasta.

For a young culinary student, JP3 is therefore not simply about making pasta. It is about demonstrating how far skill, precision and imagination can take a simple ingredient.
